Default My paninis are too oily - or not brown!

Help! I'm using a Cuisinart Griddler - if I brush bread with olive oil
(even a small amount) it seems that the bread becomes too oily. If I
don't use olive oil, the bread doesn't brown.

What are you folks using for bread and/or coatings to get a nice, crisp
panini?

OK! Good suggestion: oil the pan, not the bread! Thanks!
Any other ideas for great paninis?
