Clams Casino
Serves:4


Ingredients
4 cups rock salt
24 small quahog clams, opened and left in half shell
3/4 cup soft bread crumbs
1/4 tsp. ground black pepper
5 tbsp. chopped Italian parsley
1/8 tsp. cayenne pepper
2 tbsp. olive oil
2 tbsp. fresh lemon juice
1 clove garlic, minced

Instructions
1. Preheat oven to 500°F. Put rock salt in shallow baking pan large
enough to hold all clams in single layer. Set the clams in the salt
(It will hold the clams in place).
2. Mix bread crumbs, black pepper, 3 tablespoons of the parsley and
cayenne. Divide the mixture between all the clams.
3. Mix oil, lemon juice and garlic; pour over clams. Bake for 10
minutes. Garnish with parsley.
