ACAPULCO CORN CHOWDER
ACAPULCO CORN CHOWDER
-------------------------------------------------------------------------------- 2 Tbsp. butter 3 Tbsp. flour 1-1/2 cups milk 1 can (15-1/4 oz.) DEL MONTE® Whole Kernel Golden Sweet Corn 1 can (8 oz.) DEL MONTE Stewed Tomatoes with Onions, Celery & Green Peppers 1 cup shredded Longhorn Cheddar cheese 1 can (4 oz.) diced green chilies 1/4 cup salsa Melt butter in saucepan; blend in flour. Cook, stirring constantly, 2 minutes. Stir in milk. Cook, stirring constantly, until thickened and smooth. Stir in undrained corn; mix well. Add remaining ingredients; heat through. DO NOT BOIL. Can be made ahead and slowly reheated.
