Mom's Banana Nut Bread

1 cup light brown sugar

1/2 cup margarine

1 1/2 cups mashed banana

3 teaspoons baking powder

1 cup chopped nuts

2 each eggs

1 tablespoon lemon juice

2 cups sifted all purpose flour

1/2 teaspoon salt



Cream sugar and margarine, then add eggs, one at a time, beating after each

addition. Stir in bananas and lemon juice. Sift together flour, baking

powder, and salt. Add and mix quickly. Stir in nuts. Pour into greased 9 x 5

x 3 in loaf pan. Bake 1 hr. at 350º. I usually bake it longer, but check
with

a toothpick in center after 1 hour. If it's doughy, bake for 1 1/4 to 1 1/2

hours.
