Default Quick Quesadillas

Quick Quesadillas

Ingredients:
8 flour tortillas (burrito or fajita size)
2 cans refried beans (any variety)
3-4 cups shredded Mexican blend cheese
2 boneless chicken breasts
1 tsp. cumin
1/2 tsp. coriander
1 tsp. salt
sour cream, salsa, green onions for toppings

Slice the chicken into strips like fajitas and saute in a skillet
with the salt, cumin and coriander till no longer pink. If it's
dry add a little oil to the pan, or broth. Preheat oven to 400
degrees F. Lightly grease or spray a baking sheet and place
two flour tortillas on it. Spread the tortillas with refried beans.
Place cooked chicken on the beans. Place cheese on top of
each tortilla evenly then top each tortilla with another tortilla
to form a sandwich. Repeat with remaining tortillas. Place
in 400 degree oven for 10 minutes or until cheese has melted
and the tortilla is crispy and lightly browned. Remove from the
oven and cool for a few minutes, then cut into triangles. Serves
4-5. NOTES: To make this a meal, serve with corn, or a salad.
You can make a meatless one by leaving off the chicken. It's
also excellent with leftover grilled chicken, beef or pork!
