Honey Apple Loaf

1 1/2 cups honey

1 Tbsp almond extract

1/4 cup brewed strong coffee

1/4 cup oil

2 eggs

2 1/4 cup flour

2 1/2 tsp baking powder

1 tsp baking soda

3/4 tsp each cinnamon and allspice

1/4 tsp salt

2 cups peeled chopped green apples

1/2 cup golden raisins



Preheat oven to 350F. Grease and flour a 9 inch loaf pan. Mix honey and

almond extract and reserve 1/2 cup and set aside. Sift dry ingredients.

Combine wet ingredients. Make a well in the dry ingredients, add the wet

ingredients and stir to mix well. Add apples and raisins and combine.

Place in the prepared pan. Bake about 1 hour or until tested done in

center with toothpick. if browning to fast, tent with foil. Remove from

pan and slice when room temperature. Drizzle pieces with the reserved

honey and almond mixture.
