1/2 cup margarine, softened

3/4 cup sugar

1 egg

grated peel from 1 orange

2-1/2 cups all-purpose flour

2 tsp. baking powder

1 tsp. salt

1/2 tsp. baking soda

3/4 cup grapefruit, sectioned and diced

1/3 cup sour cream

3 Tbsp sliced almonds

Beat margarine and sugar until light and fluffy. Beat in egg and Texas

orange peel. In a separate bowl, combine flour, baking powder, salt

and soda; stir into margarine mixture alternately with Texas

grapefruit and sour cream, until flour is moistened. Sprinkle almonds

on bottom and sides of a well-greased 9x5 inch loaf pan. Pour batter

into pan. Bake in 350 degree oven 60-65 minutes until toothpick

inserted in center comes out clean. Cool in pan 10 minutes, then turn
