Blackened Steak And Salsa



1/2 tsp. garlic powder

1/2 tsp. chili powder

1/2 tsp. ground cumin

1/2 tsp. salt

1 lb. flank steak

1 cup medium or hot salsa



Combine the garlic powder, chili powder, cumin and salt in a

small bowl. Sprinkle the mixture over both sides of the steak, and

rub it into the meat.

Coat a grill pan or cast-iron skillet with cooking spray. Turn

on the exhaust fan above the stove. Heat the pan until it just

begins to smoke. Add the steak, and cook it 4 to 5 minutes on each

side (for medium rare).

Transfer the steak to a carving board, and let it rest 3 to 5

minutes. Cut it across on the diagonal into thin strips. Serve the

steak fanned out on 4 dinner plates, and place a 1/4-cup mound of

salsa on each portion.

Makes 4 servings.
