Chicken Glazed in Bean Sauce

Ingredients:

1 chicken breast
3 garlic cloves, peeled
2 spring onions, trimmed and cut into thirds
1 tablespoon rice wine
2 tablespoons bean sauce
2 ounces roasted cashews
4 tablespoons oil

Marinade:
1 teaspoon soy sauce
1 teaspoon rice wine
1 teaspoon cornstarch
1/2 egg white (lightly beaten)
1 teaspoon sesame oil
dash of pepper

Directions:

Dice the chicken into cubes. Mix the marinade ingredients. Let chicken
sit in the
marinade for at least a half hour.

While the chicken is marinating, prepare the ginger and green onions.

Heat wok and add 3 tablespoons oil. When oil is ready, put in half of
the garlic and
spring onions and stir-fry until fragrant. Add the diced chicken and
stir-fry quickly.
After about one minute, lower the heat and add the wine. Once the
sizzling has
stopped, remove the chicken and set aside.

Heat the wok again and add 1 tablespoon oil. Add the garlic and bean
sauce. Add
the chicken and blend in the bean sauce as a glaze. Mix in the cashews
and
serve hot.
