Now rabbit on the other hand can be quite tasty. Actually Snake tastes a lot like chicken, the first one I brioled and was rather tough.... better to fry in an little butter and oil. |

I am a certified member of PWETA not to be confused with PETA. PWETA = People who eat tasty animals. I found that racoon was too fatty for my taste so I fed it to the dogs instead. Snake is good, again, if you cook it properly. Rabbit is very nice when cooked. I prefer to stuff it with a sausage stuffing. Squirrel is something that I haven't tried. (Yet). Yes, wild rabbit is much tastier than tame (caged) rabbit. Not as fatty either. I have yet to find that any of the mentioned animals taste like chicken other that chicken. |

On the subject of animal cruility, http://www.savetoby.com (i dont think hes gonna really eat the rabbit) At least there are some good rabbit recipies there..... Just a little information:
The serum (blood with the cells removed) used in the Human Genome Project (mapping the human genome) comes mainly from rabbits. Reason is any contamination can be eliminated by differentiating the results. I ran a rabbit slaughter house for over 10 years. We processed an average of 500 rabbits a week. We only processed one day a week due to limited raw material supplies. We are out of business now due to legislation, tax policies, government regulations and other factors. The main reason we decided to go out of business was competition from Chinese suppliers importing product through Canada. Their product was far inferior to our freshly processed, flash frozen, inspected, quality controlled, domestically produced product. We were profitable right up to the closing day. We employed an average of 10 persons. We generated taxes for our state and local agencies. We produced a quality product. Oh, by the way we also raised rabbits on a commercial basis before we opened the plant. Rabbit is a very good source of protein. Rabbit is very tasty. Rabbit products (we had buyers for 100% of every rabbit we produced) when processed properly are 100% non polluting. |
