Better Than Sex Barbecued Ribs
Serves: 4-6 Our choice of rub and sauce is very important to the end product but the process of brining and slow cooking are the most important. The sauce I chose for this recipe is an excellent all purpose barbecue sauce that is all natural and tastes incredible. Ingredients: 4 slabs ribs 2/3 cup kosher salt 1/2 cup plus 2 tablespoons brown sugar 1/2 cup black pepper, cracked Pinch dried thyme 13 cloves 13 allspice, cracked 3 bay leaves Southern Barbecue Rub Bone Suckin BBQ Sauce Prepare brine by combining salt, brown sugar, black pepper, thyme, cloves, allspice and bay leaves with 3 quarts of water and bring to a boil. One the brine has come to a boil, turn off heat and let cool. Remove the membrane from the backside of the ribs and place them in a clean trash bag. Place the trash bag into a cooler lined with a small amount of ice. Pour brine into the trash bag with ribs. Tie the trash bag so that it will not leak and let brine overnight. Remove ribs from brine and dry them gently. Rub with Southern Barbecue Rub and let come to room temperature before placing on grill. Prepare a medium hot fire for indirect heat cooking in a covered grill according to manufacturer's instructions. Position rack 4-6 inches from fire. Soak hickory and mesquite chips and chunks in water to cover for at least 20 minutes. When grill reaches a temperature between 250-300 degrees F, put on your ribs. Try to keep the temperature in that range using charcoal and wood chips and chunks without opening the grill more than up have to. The ribs should not need to be turned but may need to be rotated due to uneven heating in your grill. Cook for 5-6 hours. Remove the ribs from the grill and let them rest covered with aluminum foil for 10 minutes. Heat barbecue sauce while ribs rest either on stove or microwave until just hot. Once the ribs have rested, cut into portions and apply barbecue sauce. Serve immediately. http://www.neopets.com/refer.phtml?username=duckiewoman |
