1 lb castor sugar
Third pint of milk
4 oz of butter or marg
3 tbsps orange juice
2 tsps grated orange rind
3 oz glace pineapple

Dissolve the sugar and the milk, boil for 5 mins, and add the fat, orange
juice and rind. Stir occasionally, and boil to 240 F, then remove from the
heat, add half the chopped pineapple and beat till smooth and creamy. Pour
into an oiled tin, arrange small pieces of pineapple on top, and when nearly
cold, mark into squares.
