2 lbs potatoes, cleaned and quartered
6 tablespoons butter 1 tablespoon wholegrain mustard 3 teaspoons prepared English mustard 1 garlic clove, crushed 1 large bunch of parsley, chopped dash of olive oil salt and pepper Cook the potatoes in a large pan of boiling water for about 20 mins or till tender. Drain and return them to the pot. Place over low heat, then hold them with towel as ya peel them and then mash well. Add butter, whole grain and English mustard,garlic, and salt and pepper, and cont...to mash. Taste and add more mustard if ya like. Finally stir in the parsley and a dash of olive oil. GREAT WITH SAUSAGES!!!! Yummmm |
