Spread the stirfry on a plate and run a very small amount of water
around the edge of the plate while tilting it slightly so the water
penetrates beneath the food. The rising vapor will condense on the
stirfry, keeping it moist.

put a coffee cup of water in the microwave and heat it until it boils.
Once it's boiling, put the stir-fry in the microwave and the boiling
water will keep the stir-fry from drying out.
