Default Aubergines -> what to do with a glut??

Hi all,

I have a glut of aubergines, and am checking in my favourite newsgroups as
my first port of call - can anyone suggest a way of preserving aubergines -
do not want to use too much freezer space as I already have a glut of
tomatoes in there.

All suggestions gratefully received.

I've already given them away to everyone I can think of and there's still
too many to know what to do with. One of the 'problems' of a Mediterranean
climate!!
