Seafood Stuffed Potatoes

Amount Measure Ingredient -- Preparation Method

6 medium baking potatoes
1/2 cup (1 stick) butter
1 teaspoon seafood seasoning (such as Old Bay)
2 1/2 teaspoons grated onion
1 teaspoon grated green onion
1/2 cup sour cream
salt and freshly ground pepper
1 cup grated sharp Cheddar cheese
1/2 pound fresh lump crab meat
1/4 pound fresh cooked shrimp
1/2 teaspoon paprika

Preheat oven to 450°. Scrub potatoes and bake 30 minutes. Pierce
potatoes with a fork and turn them over. Bake for another 20-30
minutes.
Remove from the oven and cool briefly. Cut each potato in half
lengthwise
and carefully scoop potato from the skins into a mixing bowl. Add the
butter, seafood seasoning, onions, sour cream, salt, and pepper. Fold
in
cheese, crab meat, and shrimp. Fill each potato skin with seafood
mixture.
Arrange on baking sheet and bake for 15 minutes. Remove from oven and
sprinkle with paprika.
