Default Baked Sole with Brown Butter and Fresh Basil

Baked Sole with Brown Butter and Fresh Basil

A simple, yet courtly, preparation for one of Aphrodite's treasures of
the sea. Dish this up with sautéed Spinach with Golden Raisins.

Ingredients:

2 6-ounce sole filets
2 tablespoons butter
Salt and pepper to taste
2 tablespoons chopped fresh basil
2 lemon wedges

Procedu

Preheat oven to 450 degrees F. Season sole with salt and pepper. Place
in glass baking pan and cook to medium doneness, about 10 minutes.

In sauté pan, melt butter over medium flame. Cook while rapidly
stirring until butter is a deep brown color.

Remove the sole from the oven and place on serving dish. Top with
brown butter and basil. Serve with lemon wedges.
