Default SPICY CRANBERRY APPLE RELISH

SPICY CRANBERRY APPLE RELISH

Yield: 4 cups

INGREDIENTS

- 2 apples (Granny Smith, Empire, Braeburn)
- 1 orange
- 1/2 cup sugar
- 2 cups cranberries
- 1 small onion
- 2 tablespoons lemon juice
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cloves
- 1 tablespoon brandy
- 1 teaspoon ground ginger

DIRECTIONS

Core and cut each of the apples into about 8 pieces. Process
in a food processor until coarsely chopped. Transfer to a
medium-sized bowl.

Remove the orange zest in thin strips, being careful not to
include the white pith. Process the zest with the sugar in a
food processor until finely chopped. Transfer to the bowl.
Squeeze in the orange juice.

Process the cranberries, 1 cup at a time, until coarsely
chopped. Add to the apples and orange zest.

Peel and cut the onion into 4 pieces. Process until coarsely
chopped. Add with the lemon juice, cayenne, cloves, brandy,
and ginger to the bowl and stir.

Cover the bowl and refrigerate for a day or two before serving.
