Zucchini and Carrot Spice Muffins
-------------------------------------------------------------------------------- 2 Cups All-Purpose Flour 2 Tsp. Baking Soda 1 ½ Tsp. Cinnamon ½ Tsp. Allspice ½ Tsp. Nutmeg ½ Tsp. Salt 3 Florida Eggs (Beaten) 1 Cup Florida Milk 1 1/4 Cups Florida Brown Sugar 1 Cup Vegetable Oil ½ Tsp. Vanilla 1 ½ cups Grated Florida Zucchini 1 ½ Cups Grated Florida Carrot ½ Cup Chopped Florida Pecans Method: Sift together flour, baking soda, and spices into a large bowl. In a separate bowl, whisk together sugar, eggs, milk and oil. Combine all ingredients until just moistened, Divide batter into greased muffin cups. Bake in a 375 degree oven for approximately 18-20 minutes. Yield: Makes 24 muffins |
