TENDERLOIN WITH VEGETABLES AND ZESPRI GOLD
Ingredients for 1 Recipe 2 ZESPRI GOLD 500 grams Tenderloin, one piece 300 grams Vegetables in season (zucchini, carrots, leeks, etc) 70 buds Of Soya 1 tbsp Extra-virgin olive oil For the seasoning 2 ZESPRI GOLD kiwifruits 1 tbsp Lemon juice 2 tbsp Extra-virgin olive oil 3 Thyme sprigs Salt and pepper Procedu 1. Cut the tenderloin lengthwise into different pieces, obtaining several small fillets with a diameter of approximately 3 cm each. 2. Heat oil in a sauté pan and fry the fillets lightly and rapidly. 3. Peel the ZESPRI GOLD kiwifruits, cut them into pieces and mash them in a vegetable mill. 4. Put a pinch of salt and pepper in a bowl, add two tablespoons of olive oil, the lemon juice and the mashed ZESPRI GOLD kiwifruit. Whip with a fork to mix all the ingredients. Use this mixture to marinade the fillets for about one hour, turning them occasionally. 5. In the meantime, clean the vegetables and cut them into thin strips. Fry lightly and quickly in a sauté pan, add some water and leave on for about 8 to 10 minutes. 6. Take the meat fillets out of the marinade and slice them thinly. Strain the marinade and use it to season the vegetables. 7. Finally, place the vegetables and meat fillets on the plates and decorate with thin slices of ZESPRI GOLD kiwifruit. 8. Preparation time: approx. 25 minutes 9. Marinating time: approx. 60 minutes 10.
