Chocolate Roll Up Cake (Easy)

Amount Measure Ingredient -- Preparation Method

***CAKE***
3 eggs
1 cup sugar
1/3 cup cocoa
2/3 cup flour
1/4 teaspoon baking soda
1/3 cup water
1 teaspoon vanilla
1/4 teaspoon salt
***FILLING***
1 1/4 cups butter
1 cup chopped pecans
1 1/3 cups flaked coconut
1 can sweetened condensed
milk*
***SWEETENED CONDENSED MILK***
1/2 cup powdered milk
1/2 cup sugar
1 cup boiling water
3 tablespoons butter or oleo



Ready, set, cook!



Line 15 x 10-inch jelly roll pan with foil. Melt butter in pan;
sprinkle nuts and coconut evenly in pan. Drizzle with condensed milk
(*blend ingredients well; chill until thick). In mixer bowl beat eggs
at high speed 2 minutes until fluffy. Gradually add sugar; continue
beating 2 minutes. Add remaining ingredients. Blend 1 minute, low
speed. Pour evenly into pan. Bake in preheated 375 degrees oven for 20
to 25 minutes. While cake is still warm, sprinkle top with powdered
sugar. Leave cake in pan; cover with towel. Put cookie sheet over
towel; invert. Remove pan and foil. Start with 10-inch side of cake;
roll jelly roll fashion, using towel to roll. Be careful not to roll
towel in cake. Leave wrapped.
