JUDY'S CHILI RELLENOS CASSEROLE
6 eggs 1 large can milk (sweetened condensed) 2 large cans whole Oretega peppers* (or can use 2 cans diced peppers mixed with the eggs) 1 pound Jack cheese, grated 1 pound Cheddar cheese, grated Grease 9 x 13" pan with 2 Tbs.. oil. Open peppers, scrape out seeds and drain on paper towels. Layer bottom of pan with peppers-skin side down. Beat eggs well and add can of milk. Pour over peppers. Salt to taste, then layer cheese, first Jack, then cheddar. Preheat oven to 400, Bake 45 minutes, cool 30 minutes. (from Valorie Davis) |
