Does anyone have a good recipe for this traditional southern dish that
is eaten on New Years Day?

I hope this isn't too late. It's a wonderful Hoppin' John recipe passed
down for generations.

4 or 5 slices of bacon
1 large onion, chopped
1 stalk celery. chopped
1 large bell pepper, chopped
2 TBS. fresh garlic
2 cans chicken broth
1 lb. smoked sausage, chopped in 1 inch chunks.
1 lb. dry black-eyed peas (soak overnight)
1 large bay leaf
1/2 tsp. dried thyme
1 (14 oz) can tomatoes, chopped
Rice, cooked, about 3 cups
Green onion for garnish
salt and pepper to taste.

Brown the bacon in a dutch oven. Remove the bacon. Sauté the chopped
onion, bell pepper and celery in bacon grease until onions are clear. Add
stock, garlic, sausage, peas, seasonings and tomatoes. Cover and let simmer
for about 2 hours. Add the cooked rice a little at a time until desired
thickness is reached. Sprinkle with green onions. Serve with cornbread.
