Default Pompey Bad Boy Chili

exclusive from www.spicetheworld.com

2 lbs. pork, cut into 1" pieces
2 lbs. beef, cut into 1" pieces
6 rashers back bacon
6 tablespoons fresh chili powder
2 large onion -- roughly chopped
1lb Mushrooms, sliced
1lb Cherry Tomatoes, leave whole
2 bulbs garlic -- finely chopped
8 Scotch Bonnet chillies -- roasted, peeled, seeded, chopped.
1 tablespoon paprika, fresher the better
1 tablespoon ground cumin, fresher the better
1 tablespoon ground coriander, fresher the better
4 beef stock cubes
1 28 oz can diced tomatoes
Water if needed
1 bottle Spanish Beer
1/4 cup bourbon (Jack Daniels is the Daddy)
2 squares plain chocolate
salt to taste


Sauté the garlic and onions until translucent, do not burn.
Add all of the meat's, chile powder and brown.
Salt the meat while cooking.
Put into your chili pot. Cast iron is best.
Put the rest of the ingredients in your chili pot and simmer for a hour or
two. Add water if going dry.
Pour some tequila over and set alight, eat as soon as you can get paste the
flames.

Serves 4-8 depending on how hungry you are
