Default Rolled Oates Banana Bread

Rolled Oates Banana Bread

inherited from the Davidson Estate in Terrell, Texas
This recipe indicates it came from the back of a rolled oats container
and is dated 1924.

1/3 cup granulated sugar
1/3 cup brown sugar
1/3 cup butter flavored vegetable shortening (recipe revamped to include
butter flavor shortening)
1 teaspoon vanilla
2 eggs
2 large ripe bananas
1/4 cup sweetened bakers coconut
1/2 teaspoon salt
2 1/4 teaspoons baking powder
1 3/4 cup all purpose flour
1/2 cup rolled oats
3/4 cup chopped walnuts

Preheat oven to 350. Cream sugars and shortening. Add eggs, vanilla, and
mashed bananas. Stir in remaining dry ingredients, coconut, and walnuts.
Pour into well greased loaf pan. Bake 1 hour, or until toothpick inserted
in center comes out clean.
