Default Sweet Southern Sweet Potato Pie a la Nita

Sweet Southern Sweet Potato Pie a la Nita

1 Pillsbury Refrigerated Pie Shell (or Homemade Pie Shell), partly baked
or
baked (see package directions)

Filling:

2 or 3 sweet potatoes (about 2 cups) -- Use red pulp potatoes if available
1 teaspoon salt
water to cover potatoes

3 Tablespoons to 1/4 cup Butter, melted
3 large eggs, lightly beaten

1 to 1 1/4 cups granulated sugar -- The amount needed depends on the
sweetness of the potatoes.
1/2 cup dark brown sugar, packed firm
1 Tablespoon flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger, or use fresh grated ginger if you have some
(optional)
1/8 to 1/4 teaspoon ground nutmeg (optional)
1/8 teaspoon black pepper
1/2 teaspoon salt

1 teaspoon Pure Vanilla Extract
1/8 teaspoon baking soda
1/2 cup buttermilk or Half & Half

Preheat Oven to 350 Degrees F
Prepare your pie shell. See package directions if using a Pillsbury
Refrigerated Pie Crust. I like to bake my shell about 5 to 7 minutes
before
adding
filling. Scrub potatoes with a brush under cold running water.
Place enough water in a pot to cover potatoes. Bring water to a boil. Add
1
tsp. salt. Boil potatoes long enough that a sharp cooking fork will easily
go
through them. Don't overcook them. Remove from heat, drain and place under
cold
running water. Cool potatoes down quickly. Now peel potatoes and mash
them.
Note: You can use peeled cold baked potatoes.

Combine peeled and mashed potatoes and melted butter in a large bowl. Add
eggs and mix well. Set aside.
Combine sugars, flour, spices of choice, black pepper, salt. Add to potato
mixture, combining well. Stir in the Pure Vanilla Extract.
Dissolve baking soda in buttermilk or Half & Half. Add quickly to potato
mixture, stirring well.
Pour mixture into unbaked (or partly baked) pie shell. Place on rack in
middle of oven and bake for about 30 minutes, or until a toothpick stuck
in the
center comes out clean and the pie is set.
Cool on a rack.

Serves 6 to 8.

Topping:

A meringue topping may be used, or simply top slices with slightly
sweetened real whipped cream and sprinkle with chopped Stuart or Schley
pecans. Or, cover with marshmallows (not mini size) and place under the
broiler to brown a bit, if desired, although not necessary.
