Turkish White Beans
White Beans In Olive Oil Turkish White Beans Turkish White Beans (serves 6) 30ml / 1 fl oz olive oil 1 large onion, chopped 1 1/2 large cinnamon sticks, broken 600g / 1 lb 5oz cooked white beans or butter beans 1 1/2 tsp salt 1/2 tsp coarse black pepper 1 tsp mild chilli powder 450ml / 15 fl oz water 300g / 10 oz chopped, tinned tomatoes 6 cloves of garlic, coarsely chopped 1 tsp sugar juice of 1 lemon 50g / 2oz flat leaf parsley, chopped Heat the oil and saute the onions and cinnamon. Add the beans, salt, black pepper, chilli powder and water. Bring to the boil. Simmer for 15 minutes then add the tomatoes, garlic, sugar and lemon juice. Simmer for a further 5 minutes. Add parsley before serving. Drain beans and rinse under cold water. Place in a saucepan of water and boil until soft. In a separate pan, add olive oil, chopped onions and garlic, thinly sliced carrots and saute until onions are soft. Drain beans and rinse under cold water. Place in saucepan with vegetables. Add salt to taste, a small amount of water and chopped parsley. Simmer until cooked. Remove from heat and cool. Serve with lemon wedges.
