Default Apricot Orange Barbecue Sauce

Apricot Orange Barbecue Sauce

Yield: About 1 1/2 cups

1 medium onion, chopped (1/2 cup)
1 clove garlic, minced
2 Tablespoons vegetable oil
1 can (17 ounces) apricot halves, drained
1/4 cup cider vinegar
3 Tablespoons undiluted frozen orange juice concentrate
3 Tablespoons light brown sugar
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/2 teaspoon salt
3 - 4 drops liquid red pepper seasoning
3 pounds chicken, veal or pork

Saute onion and garlic in oil in a medium saucepan until tender, about 5
minutes. Place apricots in container of electric blender; cover; whirl
until smooth. Add vinegar, orange juice concentrate, brown sugar, dry
mustard, ground ginger, salt and red pepper seasoning. Cover whirl until
just blended. Stir apricot mixture into sauteed onion; bring to boiling,
stirring constantly. Lower heat; simmer, uncovered, until thick, about 15
minutes.

Brush on meat the last 20 minutes of cooking.
