Default Apple Pie

Apple Pie

1 packet flakey pastry
6 to 8 tart apples
3/4 cup white or 1/2 cup firmly packed brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon (I put in more)
1 tablespoon lemon juice
2 tablespoons butter

Line 9" pie plate with pastry and fill with apples, pared and sliced thin.
Sprinkle with mixture of sugar, salt, cinnamon and then lemon juice and
dot with butter. Moisten edges of crust, cover with top crust and press
edges together; brush crust with milk or cream. Bake in a hot oven (450 F)
10 minutes; then reduce heat to moderate (350 F) and bake 40 to 50 minutes
longer.
