Default Gnocchi Sauce

Here is a sauce for gnocchi:

Panna Con Gorgonzola [Gorgonzola Cream Sauce for Pasta]

Excellent with potato gnocchi or tortellini---A variation from Viariggio
(near Pisa) is to add chopped walnuts

2 Tbsp Butter
1/2 tsp. flour
1 cup Cream, whipping
1/4 lb Gorgonzola cheese (imported)

Melt the butter in a small saucepan slowly adding the flour. Cook, but do
not brown the flour. Slowly add the cream and heat to just below a boil,
stiring constantly with a wire whisk. Stir in chunks of gorgonzola and
stir until they are dissolved. Pour over cooked, buttered pasta like
tortellini or gnocchi.
