Sweet Potatoes with Apples and Apricots

2 lbs sweet potatoes peeled and thinly cut on the diagonal
1 large apple peeled and sliced
12 dried apricots diced
3/4 cup honey
2 Tbsp frozen orange juice concentrate undiluted
1/2 cup apple cider
salt and pepper to taste

Layer half potatoes in a buttered baking dish in overlapping rows. Cover
with apple slices, then more potatoes, chopped apricots. Whisk the honey,
cider and orange juice together and pour over the potatoes. Cover with
foil and bake in a 375 oven 40 minutes. Uncover and bake 15 minutes longer
or until potatoes are fork tender. Let sit in pan 15 minutes before
serving. Yield 8 servings Source: 12 Best Foods Cookbook by Dana Jacobi.
