makes 6 servings

3 ripe bananas
5 Tbsp sifted all-purpose flour
3 Tbsp water
3 tsp sugar
3 Tbsp rum, warm
oil, sufficient for deep-frying

Cut three ripe bananas crosswise each into 3 pieces. Coat banana pieces
with batter made from flour
and water. Deep fry at 360F for 5 to 8 minutes.
In a saucepan, place pieces of fried banana, pour sugar and warmed rum
over them. Ignite.
