Fritters-Corn Fritters-Corn From: "Marlene" How about some recipe for corn fritters or corn cakes. * Exported from MasterCook * Corn Fritters Recipe By :Rosamund Grant Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces frozen corn -- thawed 1 onion -- chopped 3 teaspoons red bell peppers -- chopped 1 egg -- beaten 2/3 cup self rising flour 1 teaspoon parsley salt and pepper to taste oil -- for frying In a blender or food processor puree the corn, onion and bell pepper. Put the mixture into a mixing bowl and add the egg, flour, parsley, salt and pepper. Whisk together. Heat 2 tablespoons oil in a non-stick skillet over medium high heat. Drop batter by tablespoonfuls into the oil and fry until golden turning only once. Heat oil in a skillet over medium high heat. Drop 1 tablespoon of the fritter batter into the skillet and cook, turning, until both sides are well browned about 1 1/2 minutes per side. Continue until all batter is gone. In a small bowl combine eggs, milk and corn. Add corn mixture to dry ingredients and mix until just barely moistened.
