Simple Asparagus and Beet Salad

6 medium beets cooked
1 1/2 cups asparagus tips cooked and cut up in small pieces
3 hard boiled eggs chopped fine
sour cream to bind ( about 1/4 cup )
lettuce leaf cups

This is a simple salad but colorful and tasty.

Hollow out the center of each beet.Mix asparagus, egg, and sour cream,
season with salt and pepper
to taste. Fill each center of beet with the mixture. Place each beet on
a lettuce leaf cup. May top each beet with extra sour cream. Note.
slice a small piece of beet from the bottom so beet will stand up
straight. May serve an additional dressing to pour over the beet such
as a favorite vinaigrette or cream type salad dressing. One can also
julienne the parts of beet hollowed and sliced and surround the lettuce
cups with it. Yield 6 servings.
