Fried Baltic Herring in Onion and Cream Sauce

4 portions

4 - 6 salted Baltic herring fillets (1 lb./420 g)
2 white onions

Coating:
1/3 cup (100 ml) rye flour or bread crumbs and white flour

Frying:
2 tablespoons butter or margarine
3/4 cup (200 ml) whipping cream

Soak the fish in water for 10 - 12 hours or follow package instructions.
Drain well. Roll in the coating.
Peel and slice the onions and brown in half the butter. Place on a platter
and keep warm. Fry the fish
in the remaining fat until golden brown. Place on platter next to the
onions.
Add cream to the juice in the frying pan and stir well. Serve the sauce
separately or pour over the fish.
Serve freshly fried together with boiled potatoes.
