Default Brilliant Mushroom Soup

Brilliant Mushroom Soup

2 large mushrooms (finely chopped)
2 gloves garlic (finely chopped)
three cups chicken stock
2 dsrt spoons corn flower
1/2 cup cream
1 Tbsp Butter
salt pepper

Finely dice a couple of mushrooms preferably Swiss Browns / Portabello
sautee in a saucepan with butter and garlic for a couple of minute add
chicken stock simmer for fifteen minutes mix the cornflower in a
little water take the pot of the heat and add the corflower liquid
while stiring you just want to add enough of the corflower water to
coat the back of the spoon when you stir the soup return to the heat
and stir till it thicken's turn of heat and add cream while stiring ad
salt and fresh pepper to taste.

This soup can also be used as a sauce for tortellini
