I have read that applesauce can apparently be substituted 1-for-1 for
shortening in baked goods, but I'm reluctant to believe that this works
completely well in all cases. Anyone have recipes in which this really
DOES
work well and doesn't mess up the finished product in any way? It just
seems
like such an odd substitution

We have a friend whose doctor put him on a non-fat, non-dairy, non-red
meat, non-shellfish, non-legume, salt-free diet. We have dinner with
this fellow once a week (I cook) and I need some recipes that I can make
with tofu or chicken that won't taste like dishwater.

Any help would be appreciated.
