This is very close to the Pannekoeken we enjoyed at a lovely cafe in Haarlem, The Netherlands, overlooking Grote Kerk and Grote Markt. Pannekoeken 1/2 cup flour 1 egg white 2/3 cup milk powdered sugar Blend the flour, milk and egg white in a blender until smooth. Heat a 10-inch frying pan over high heat. Spray with cooking spray, then pour half the batter into the pan, swirling to make a thin layer that covers the bottom of the pan. Cook until the top appears dry, then slide onto a plate. Turn over and slide back into the pan and cook for about a minute, or until browned on the bottom. Slide onto a large plate, sift powdered sugar over the top and serve immediately. Repeat with the remaining batter. Makes 2 pancakes. (Note: the recipe can easily be doubled) Apple Topping: Before starting the pancakes, peel and thinly slice a sweet cooking apple. Poach in 1/2 cup of apple juice, just until softened. After turning the pancake over, arrange apple slices on top.
