Potatoes Simmered In Cream

5 large baking potatoes
2 cups whipping cream
2 tablespoons butter
2 cloves garlic, crushed
1/2 teaspoon salt
1/3 cup grated Parmesan cheese
freshly ground black pepper

Peel potatoes and cut into very thin, uniform slices. Simmer cream,
butter, garlic and salt in a small saucepan until the quantity has reduced
to 11/2 cups. Butter a small casserole and arrange the potatoes in layers.
Between each layer, add a little Parmesan cheese and freshly, ground black
pepper. Pour the reduced cream over the potatoes. Cover with a tightly
fitting lid and place in the oven (300 ) for 11/4 hours until the potatoes
are tender.
