Armadillo Eggs

Armadillo Eggs 6 jalapeno peppers,slit on one side and par-boiled for 4 minutes Monterey Jack cheese for stuffing peppers flour 2 eggs beaten 1 Tbsp. water Cracker crumbs After stuffing peppers with cheese, roll in flour, then dip into egg mixture, then into crumb mixture.
