Default Easy Rotisserie Game Hen

BlankEasy Rotisserie Game Hen

1 ea Cornish game hen, well thawed (One hen serves two adults)

Baste:
Mix equal proportions lemon juice, soy sauce (light), and light olive
oil. 1/8 cup each is a good start for a single hen.

Place game hen on gas grill rotisserie spit.
Rotiss for 30 minutes on high, then baste.
Rotiss additional 15 minutes on medium, then baste.
Rotiss 15 minutes on high then baste.
Total cooking time one hour.
(For a charcoal grill, keep roasting time same on medium-high heat.)

Remove from spit to plate. Let stand for 3 minutes. Cut in half and
serve.

Suggested accompaniment: This Cornish game hen is wonderful with a
steamed whole artichoke from Castroville and a mock Hollandaise!
