Stouffer's French Coconut Pie

Source: This claims to be the restaurant recipe from a former worker.

Yield: 8 servings

4 eggs
2 cups granulated sugar
1 teaspoon cider vinegar
1 teaspoon vanilla extract
1 1/3 sticks butter
1 (5 1/3 ounce) can Baker's coconut
1 unbaked 9-inch pie shell

Preheat oven to 425 degrees F. Melt butter, set aside.
Beat eggs slightly, thirty seconds to one minute. Add sugar, vinegar,
and vanilla extract and beat until well combined, about one minute. Add
melted butter or margarine and beat until thoroughly combined, about
two minutes. Add coconut and mix just until well distributed. Pour into
unbaked pie shell. Bake at 425 degrees F for 10 minutes.
Reduce temperature to 350 degrees F and bake for an additional 30 to 35
minutes, until top is golden brown and filling is set. If pie appears
to be browning too quickly, reduce oven to 325 degrees and tent a piece
of aluminum foil loosely over top.
Hold pie at room temperature for serving. Serve with unsweetened
whipped cream, lightly flavored with vanilla extract.

NOTE: I prefer using the Southern Style shredded coconut, but the Angel
Flaked variety is acceptable.

French Coconut Pie

"This is very rich and custard-like with coconut and pecans"

Recipe yield: 2 - 8 inch pies or 1 - 9 inch deep dish pie.

2 1/4 cups white sugar
2 tablespoons all-purpose flour
6 eggs
1 cup buttermilk
1/2 cup margarine, melted
1 cup flaked coconut
1 cup chopped pecans
2 prepared 8 inch pastry shells

Preheat oven to 350 degrees F (175 degrees C). In a small bowl, mix
together the sugar and flour.
In a large bowl, mix the eggs with a wire whisk. Whisk flour mixture
into eggs, until smooth. Stir in buttermilk, margarine, coconut and
pecans. Pour into unbaked pie crusts.
Bake in preheated oven for 45 minutes. If making a 9 inch deep dish
pie, bake for 1 hour.

1 1/2 cups sweetened flaked coconut
1/2 cup butter or margarine, melted
1 tablespoon white distilled vinegar
1 teaspoon vanilla extract
1 (9-inch) unbaked pie shell

Preheat oven to 350*F. Combine sugar, beaten eggs, coconut, melted butter,
vinegar, and vanilla; mix well. Pour into unbaked pie shell and bake for
50 to 60 minutes, or until a
knife inserted in center comes out clean.
Cool before serving. Makes 8 servings.

(Rains County)

3 eggs
1 1/2 cups sugar
1/2 cup butter or margarine, softened
1 tablespoon lemon juice
1 teaspoon vanilla
3 1/2- ounce can flaked coconut
1 pie shell (9 inch deep dish), unbaked

Preheat oven to 350 degrees. Beat eggs in bowl with fork; stir in
sugar, butter, lemon juice, vanilla and coconut. Pour into pie shell.
Bake for about 45 minutes or until knife inserted in center, halfway
between center and edge comes out clean. Cool.

Yield: 8 servings.
