Haddock Casserole
Seafood Casserole
Shrimp And Fish Casserole
Orange Roughy Casserole



Haddock Casserole

1 1/2 lb. haddock (or sole)
1 can cream of shrimp soup (or white sauce 1 cup with added seafood
pieces)
1/2 cup bread crumbs
3/4 stick melted oleo
1/4 cup chopped onion
1/2 tsp. Worcestershire sauce
Garlic powder to taste

Cut fish in serving size pieces. Place in baking dish. Cover with sauce.
Combine remaining ingredients to make a topping. Sprinkle over fish/sauce.
Bake for approximately 30 minutes at 350 degrees.

Seafood Casserole

6 Tbsp. butter
1/2 cup celery, chopped
1/2 cup onion, chopped
2 Tbsp. parsley
1 lb. seafood (shrimp, crab and/or lobster)
1/2 lb. grated cheddar cheese

Saute first 4 ingredients and season with Worcestershire sauce and garlic
salt. Add seafood and cheese. Put in greased casserole dish and bake at
350 degrees until seafood is done and cheese melted. Serves 6.



Shrimp And Fish Casserole

1 lb. fish, cod, sole or flounder
2 cloves garlic, minced
3 Tbsp. water
1/2 tsp. salt
Lemon juice to taste
1 Tbsp. Dijon mustard
Fresh dill or parsley
1 med. thinly sliced onion
1 Tbsp. butter
Dash green pepper
1 cup sour cream
1 cup cooked baby shrimp

Wipe fish with damp cloth, cut into serving pieces. Saute onion in butter
in heavy saucepan until soft. Add garlic and fish. Sprinkle with water,
add salt and pepper. Heat to simmer. Cook 10 to 20 minutes depending on
fish used and serving size. Do not over cook. Sprinkle with lemon juice.
Mix sour cream and mustard. Just before serving, add sour cream mixture
and baby shrimp to casserole. Heat until hot without stirring. Sprinkle
with dill or parsley.




Orange Roughy Casserole

2 lbs. orange roughy fillets
1 tsp. salt
1/8 tsp. pepper
1/4 cup butter or margarine
3 cup mashed potatoes (hot)
1 cup dairy sour cream
1/4 cup minced onion
1/4 cup fine bread crumbs, divided
2 Tbsp. grated Parmesan cheese
Paprika
Any fish fillets may be substituted
Instant mashed potatoes may be used
following pkg. directions.

Cut fillets into serving pieces, sprinkle with salt and pepper. Brown
lightly in butter, turn once. Grease shallow baking pan. Spread mashed
potatoes over bottom of dish. Spread 1/2 cup sour cream over potatoes;
sprinkle with minced onion and 1/2 the bread crumbs. Arrange fish on
crumbs. Sprinkle with remaining crumbs and cheese. Top with a ribbon of
sour cream; sprinkle lavishly with paprika. Bake at 350 degrees at 20 to
30 minutes or until fish flakes. Makes 6 servings. I serve fresh asparagus
with lemon, butter, toss salad and fresh fruit.
