Pizza in a Panic
Desperation Dinners! by Beverly Mills and Alicia Ross

Pizza, the ultimate panic food, can be whipped up in no time with an
already-prepared pizza crust.


2 cups already-sliced fresh mushrooms
1 can (6 ounces) tomato paste
1/2 cup water
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian seasoning
1 large (12-inch) partially baked pizza crust, such as Boboli
1 cup (4 ounces) already-shredded mozzarella cheese
1 1/2 ounces pepperoni (about 6 slices)

The oven should be already heated to 450 degrees.
Microwave the mushrooms in a covered 1-quart microwave-safe dish for
2 minutes on high.
Meanwhile, combine the tomato paste, water, garlic powder, onion
powder, and Italian seasoning in a small bowl and stir well to blend.
Spread the sauce on the partially baked crust and sprinkle with the
cheese.
Drain the liquid from the mushrooms and scatter them over the cheese.
Top with the pepperoni slices. Bake until the cheese is bubbly and
begins to brown at the edges, 10 to 12 minutes. Serve at once.


Prep time: 5 minutes
Cook time: 13 minutes
Serves: 4
