Ice Box Cookies

Like my home to smell nice when company comes thru the doors in the
winter time. Bonnie

Ice Box Cookies

1 cup butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract, optional
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup nuts chopped pecans or black walnuts

Cream butter and sugars, add eggs and mix well. Sift salt and soda with
flour, add nuts and mix into first part. Roll into a round roll, size of
large rolling pin. Wrap in Saran Wrap. Put in refrigerator overnight.
Turn out on floured board and slice very thin. Bake in moderate oven 350
Degrees F. until crisp. Do not brown. The cookie rolls can remain in
icebox for sometime and be cut and baked as needed. Cookies keep nicely
in jars.
