Boursin Spinach

Serves 6
Recipe by: Unknown

1 1/2 baby spinach
1/2 cup diced onion
2 tablespoons butter -- divided
2 tablespoons flour
1 cup whole milk
1/2 cup heavy cream
52-ounce package boursin cheese
2 tablespoons freshly grated Parmesan cheese
Salt and pepper to taste
1/2 teaspoons nutmeg
1/2 teaspoons cayenne pepper
3/4 cup coarse bread crumbs
1 tablespoons olive oil

Preheat oven to 425 degrees. Coat a shallow baking dish with nonstick spray. Steam
or microwave spinach just until wilted and drain well, pressing to release moisture,
and set aside. In a large saucepan over medium heat, saute onion in 1 tablespoon of
the butter until soft. Add flour and cook, stirring, for about 1 minute. Gradually
whisk in milk and cream; cook, stirring constantly, for 1 minute. Add boursin, a
little at a time, stirring until melted and smooth. Remove pan from heat and add
spinach, Parmesan and seasonings. Transfer mixture to prepared baking dish. Melt
remaining 1 tablespoon butter; in a medium bowl, combine it with crumbs and olive
oil. Top spinach mixture with crumbs, patting to make them adhere. Place dish on
baking sheet and bake until topping is golden, about 30 minutes.
