Boursin Spinach
Serves 6 Recipe by: Unknown 1 1/2 baby spinach 1/2 cup diced onion 2 tablespoons butter -- divided 2 tablespoons flour 1 cup whole milk 1/2 cup heavy cream 52-ounce package boursin cheese 2 tablespoons freshly grated Parmesan cheese Salt and pepper to taste 1/2 teaspoons nutmeg 1/2 teaspoons cayenne pepper 3/4 cup coarse bread crumbs 1 tablespoons olive oil Preheat oven to 425 degrees. Coat a shallow baking dish with nonstick spray. Steam or microwave spinach just until wilted and drain well, pressing to release moisture, and set aside. In a large saucepan over medium heat, saute onion in 1 tablespoon of the butter until soft. Add flour and cook, stirring, for about 1 minute. Gradually whisk in milk and cream; cook, stirring constantly, for 1 minute. Add boursin, a little at a time, stirring until melted and smooth. Remove pan from heat and add spinach, Parmesan and seasonings. Transfer mixture to prepared baking dish. Melt remaining 1 tablespoon butter; in a medium bowl, combine it with crumbs and olive oil. Top spinach mixture with crumbs, patting to make them adhere.
