Default Honey Lemon Squares

Honey Lemon Squares

1 cup light brown sugar
2 cup flour
1/2 cup butter
1 cup coconut
1 cup honey
2 Tbsp butter
1/4 cup fresh lemon juice
3 eggs, slightly beaten

Cut together the first 4 ingredients. Press 2/3 of the mixture on the
bottom of an ungreased (9 inch) square glass pan. In a small saucepan cook
the honey, 2 Tbsp butter and lemon juice til just lukewarm. Add the eggs
and continue cooking, stirring constantly, til thickened (about 5
minutes). Cool the mixture in a ice-water bath and pour over the crust.
Top with the remaining 1/3 crumb mixture, pressing down lightly to make
it even. Bake 350 for 30-40 minutes til nicely browned. Cool and cut.
(makes 3 dozen 3 1/2 inch squares)
