Southern Fried Fillets
Makes 4 servings 1 cup all-purpose flour 1/2 to 3/4 tsp. salt 1/4 tsp. pepper 1 1/2 cups finely chopped pecans 1 1/2 cups soft breadcrumbs 4 flounder fillets )about 1 1/2 lbs.) 2 large eggs, beaten 3 Tbsp. butter or margarine, melted 3 Tbsp. vegetable oil Combine flour, salt, and pepper in a shallow dish. Combine pecans and breadcrumbs in a shallow dish; stir well, and set aside. Dredge fillets in flour mixture; dip in beaten egg, and coat with pecan mixture. Fry fillets in hot butter and vegetable oil in a large skillet over med. heat 3 to 4 min. on each side or until fish flakes easily when tested with a fork. Drain well.
