Braised Carrots With Cilantro And Curry

Serves 3 to 5
Published in: Cooking In Style The Costco Way

2 tablespoon butter
1 1/2 teaspoon ginger -- minced
1 clove garlic -- minced
1 teaspoon curry powder
1/4 cup chicken broth
1 tablespoon mango chutney
1 lbs baby carrots
salt and pepper
3 tablespoon cilantro -- fresh chopped
Melt butter in a large skillet over medium heat. Add ginger and garlic;
saute for 30 seconds. Stir in the curry powder, chicken broth, and
chutney. Add carrots and stir to combine. Cover and simmer until carrots
are tender and coated with sauce, about 7 minutes. Season to taste with
salt and pepper and garnish with chopped cilantro.
