Default Heirloom Tomato Salad with Broiled Feta

Heirloom Tomato Salad with Broiled Feta Topping


Serves 4
Active Time: 15 Min
Total Time: 15 Min

1 lb heirloom tomatoes, cored, cut into bite-sized pieces
3 Peeled Shallots, minced (about 2 Tbsp)
6 leaves Fresh Basil, minced
Sea Salt to taste
Freshly cracked black pepper to taste
2 Tbsp Colavita Raspberry Wine Vinegar
1/4 cup Wegmans Extra-Virgin Olive Oil
4 Tbsp 34 Degrees Marinated Feta (Cheese Shop)

You'll Need: Ramekins Preheat oven to BROIL Toss tomatoes, shallots, and
basil together in large bowl. Season to taste with sea salt and pepper.
Add vinegar and olive oil. Toss gently. Divide salad between 4 ramekins
(about 1/2 cup each); top each with 1 Tbsp feta. Broil 3-4 min, until
cheese is very lightly browned.
